Chimichurri Recipe – Using Up Those Extra Greens

Chimichurri hails from South America and is believed to have originated in Argentina. The name ‘chimichurri’ is thought to originate from the Basque term tximitxurri which roughly translates to “a mixture of several things in no particular order”.

This is a must-try in every kitchen and can be used in a few ways – as a sauce, a marinade, or a condiment. It is similar to pesto but opts for parsley and coriander, instead of basil.

Ingredients

1 handful parsley
1/2 cup olive oil
1/2 cup red wine vinegar
1 handful coriander
3 cloves garlic, peeled
1 tsp chilli flakes
1 tsp ground cumin
1 pinch salt
