An unbeatably simple but elegant meal that’s wonderfully addictive, light and tasty.
Ingredients for two people
1 tbs | vegetable oil |
1/2 tbs | fresh ginger, grated |
1/2 stalk | lemongrass, grated |
1 | chilli, finely chopped |
2 | garlic cloves, chopped |
350 g | chicken mince |
1 | lemon, juiced |
1/2 tbs | fish sauce |
1 tsp | brown sugar |
1/2 | red onion, finely sliced |
1/2 cup | coriander, finely chopped |
1/2 | small iceberg lettuce |

For the chicken
Heat oil in a large pan over medium heat. Add ginger, lemongrass, chilli and garlic and cook for 1 minute. Add the chicken mince and using a spoon break up the mince as fine as possible, cook for 5 minutes or until all the chicken is cooked. Remove from heat and set aside to cool.
For the dressing
In a small bowl combine the lemon juice, fish sauce and brown sugar and whisk until sugar has dissolved. Poor the dressing over the chicken, add the red onion and coriander and stir to combine.
To serve
Serve the larb with the lettuce leaves, using the lettuce leaves to wrap the larb into little parcels.
